Black bean burger

We love black bean burgers! I sauté onions, peppers, add to 1can mashed beans, 1egg, bread crumbs, ketchup, mustard and bake 350 for 20 minutes. I served with feta, pickle and lettuce. Yum!
We started with a cool cucumber, dill, lemon soup.

Hillbilly dinner

Hillbilly produce market now has some organic produce...yay!!!

Lunch

I have been making LOTS of soup lately. ( I'm sure while my mom was here for the holidays she was probably sick of it!) I can eat it every day. I made a simple vegetable soup with sweet potatoes , potatoes, celery, onions,corn, carrots, fire roasted tomatoes, thyme, and a healthy dose of cayenne and turmeric...
The French like to start their dinner with a small bowl of soup... I think that's a great idea.
