TROUT DINNER


ALSO ADD A TOUCH OF HONEY


LAST NIGHT I MADE A FAST AND HEALTHY DINNER! I MADE SWEET POTATO AND QUINOA SALAD (MARK BITTMAN) I ADDED RED PEPPER, SHALLOTS, EVOO, SHERRY VINEGAR, AND CHIVES (MINE HAVE FINALLY POPPED UP IN THE GARDEN) THIS IS SOOOOOO GOOD. I HAD SOME FOR BREAKFAST!
I BOUGHT 2 FILLETS OF RED STARBURST TROUT AT EARTHFARE. I MARINATED IT IN PONZU SAUCE (IT'S SOY SAUCE AND CITRUS) SCALLIONS, JALAPENOS, GINGER, S&P. I PAN SAUTED IT FOR ABOUT 2 MINUTES PER SIDE, THEN PUT IN THE MARINADE. IT WAS OUTSTANDING. VERY FRESH AND LIGHT....MARINADE GOOD TOO.
I MADE A TANGY SLAW....THINLY SLICED CABBAGE, ADDED LIME JUICE, ASIAN GARLIC CHILI SAUCE ( NOT SO MUCH...VERY HOT) ONE T. EVOO AND CHOPPED CILANTRO.
ALL FLAVORS SO GOOD TOGETHER.
